Edamame Hummus recipe


  • 1 cup shelled, boiled edamame
  • 1 can garbanzo beans, drained and rinsed
  • 1/2 clove clove garlic
  • 1/4 cup fresh cilantro
  • 1 fresh lemon, squeezed
  • 1/2 teaspoon salt
  • 1/3 cup olive oil

In a food processor, blend the edamame and garbanzo beans with garlic, cilantro, lemon juice, olive oil and salt. Process until smooth and well blended. Add salt to taste. Pour into a serving bowl and serve with chips, crackers or veggies. Also delicious as a sandwich spread.
