- 2 medium cucumbers, sliced
- 1/4 tsp salt
- 1 cup yogurt (plain or Greek)
- 1 Tb. fresh dill, roughly chopped
- 1 Tb. lemon juice
- 1 Tb. olive oil
- 1/2 clove garlic, minced
- Garlic salt to taste
Seed cucumbers and slice thinly. Sprinkle with salt, combine, and allow cucumbers to rest.
Whisk together all other ingredients in a separate bowl. Drain the salted cucumbers, then gently combine the yogurt mixture with the sliced cucumbers.
