Cherry Tomato Salad with Mint & Champagne Vinegar recipe

  • 1 pint mixed cherry tomatoes, halved horizontally
  • 12 broad leaves of fresh mint, finely sliced
  • 1 small shallot (or 1/2 small red onion), minced
  • 3T champagne vinegar (or use champagne or sparkling wine!)
  • 3T extra virgin olive oil
  • Sea salt and cracked black pepper to taste

Serves 4 as a side dish

Combine all ingredients and season to taste. Let stand 20 minutes before serving.
