With its rich flavor, Rungia klossii is known as “the mushroom plant”. It’s high in vitamins A & C, calcium, Iron and beta carotene. It’s also a great source of protein (about 3%) and is rich in chlorophyll.
Use Rungia klossii in salads, soups, stir fry’s, sauces and sandwiches. The flavor increases when cooked but must be added at the last minute — like many leafy greens, overcooking will result in the leaves losing color.
Rungia klossii grows about 2ft high, but is best kept smaller with regular pinching or regular use. It grows well in shade, but will tolerate a sunnier spot in good rich soil (though the leaves will not be as large). Grows best in a warm spot in the ground or in a pot with protection from frost.
