- 1 pint mixed cherry tomatoes, halved horizontally
- 12 broad leaves of fresh mint, finely sliced
- 1 small shallot (or 1/2 small red onion), minced
- 3T champagne vinegar (or use champagne or sparkling wine!)
- 3T extra virgin olive oil
- Sea salt and cracked black pepper to taste
Serves 4 as a side dish
Combine all ingredients and season to taste. Let stand 20 minutes before serving.
