Spaghetti with Arugula and Tomatoes
This is a very quick and easy dish, refreshing and healthy. Serves 4-6.
3/4 to 1lb of spaghetti
2 cups of coarsely chopped arugula (pat dry after washing)
2 cups of diced tomatoes
Salt & Pepper
3-4 Tb extra-virgin olive oil
Grated parmesan cheese
Bring a large pot of salted water to a boil and add the spaghetti. While spaghetti is cooking, chop the arugula and tomatoes and place them in a saute pan large enough to accommodate the pound of pasta, and pour the olive oil, salt and pepper, and cheese but do not turn on the heat.
A minute before the pasta is cooked, turn the fire on high below the arugula- tomatoes mix. Drain the pasta and then place the hot noodles over the arugula- tomatoes sauce, stir thoroughly to combine and the meal is ready.
Season to taste with salt and fresh ground pepper and serve immediately with extra grated parmesan cheese.
