Maple baked acorn squash
2 acorn squash, cut in half
4 Tb. unsalted butter
4 Tbs. maple syrup
1 tsp. fresh thyme
Salt and pepper to taste
Preheat oven to 350 degrees. Split squash in half and scoop out seeds.
Place squash, cut-side down, in a baking dish and add 1/3 cup of water so that the squash stays moist Roast until tender, about 45-60 minutes.
After baking, in the hollow of each piece place 1Tbs. butter, 1 Tb. maple syrup, and a sprinkle of fresh thyme. Season with salt and pepper.
